Duan Chun Zhen, an Experience that Change the Way You Thought about Beef Noodles

In contrast to traditional Taiwanese beef noodles, Duan Chun Zhen guarantees beef noodles can also be one of a kind. It is said that Duan Chun Zhen, the lady originally lived in Sichuan, moved to Pingtung in 1948. In order to support her family, she prepared some homemade spicy bean pastes and other sauces and sold them to customers. She liked to fry them with braised beef, which becomes the soup base of the beef noodles.
相較於台式傳統的牛肉麵,段純貞的牛肉麵標榜著獨特的四川口味,而最近名氣越來越大的段純貞,分店甚至開到台南了。據說原本居住在四川的段純貞女士在民國37年國民黨遷台時移居到台灣屏東的一處眷村,為了維持家計,故在家中自製辣豆瓣、豆豉等醬料滷菜,並以這些特製材料與牛肉拌炒,後傳予後代經營牛肉麵店。

The texture of ingredients is pretty good, but the marinade is too thin. It would be better if eating with some soy sauce, vinegar, and chili sauce.
食材本身口感不錯,不過沒有滷的很入味,建議加上佐料品嘗。

Sauce & Pickled Mustard 沾醬與酸菜
They provide soy sauce, vinegar, chili sauce, and pickled mustard for customers. The seasoning of pickled mustard is neither too strong nor too thin, the sourness balances well with the saltiness of the pickled mustard itself.
店裡有提供醬油、山東老醋、辣椒醬跟酸菜供客人自由取用,酸菜炒得非常入味,除了可以吃到蔬菜本身的爽脆度外,吃完後還能感受到一些辣椒香氣殘留在口齒間。

Soup 湯頭
The soup base is basically adopted from the way people in Chongqing making their traditional hot pot broth. They fry some sticky and chili bean paste, fermented rice, and spices like Chinese red pepper to add some flavor to the soup base. The whole process takes almost 13 hours to finish the soup, really complicated and time-consuming. I was a little bit hesitated when seeing the floating oil on the soup; however, after taking a sip, I found it very smooth and easy to drink, not too spicy or greasy.
他們家的湯底採用重慶老火鍋底的方式製作。加入了四川知名陴縣豆瓣醬、酒釀及辛香料爆出香氣,最後放入花椒、麻椒等四川香料炒至八小時才完成底料。過程繁複且耗時。看到表面的油花原本讓我望而卻步,但入口後發現雖然加入了這麼多辛辣的香料,湯頭本身不會過辣也不會油膩,非常順口,微麻的後勁伴隨著濃濃花椒香,令人忍不住一口接著一口。

Noodles 麵條
For noodles, you can choose either Kyushu noodles or homemade noodles. Originally, I thought the traditional homemade noodles are better for this kind of beef soup; yet, to my surprise, the Kyushu noodles( thin one) are more chewy and al dente.
麵條可以選擇細麵或是手工麵(粗),本來以為傳統手工麵比較會吸湯汁,但口感上相較於細麵來說比較沒嚼勁,所以我個人還是比較推薦細麵。


Braised Half Cowhells and Half Beef 半筋半肉
Cooking anything lean often results in too dry ,but this lean beef does not taste less tender though the fat has been almost removed. Really like the springy texture of the beef.
瘦肉的部分不會乾柴,吃起來很多汁非常彈牙。牛筋的部分也是入口即化,滷的很入味。
