Traditional Taiwanese Cuisine- A Jiang's Fried Eel Noodles 阿江鱔魚意麵

阿江鱔魚意麵是採用最傳統的器皿裝取備料,例如:一旁的甕裡放著糖、鹽,還有一旁的生洋蔥、生鱔魚、炸意麵、米粉等。我欣賞著老闆的俐落刀功、大火快炒時的專注神情。順道一提,阿江菜單上只有三樣菜-鱔魚意麵、鱔魚米粉、乾炒鱔魚意麵,據說還有熟客才知道的隱藏版菜單。

A Jiang puts seasoning like salt, sugar, raw onions, raw eels, fried noodles, rice noodles etc. in various traditional containers, which is quite unique. While waiting for our meals, I appreciated how the cook sliced each ingredients, how he did salt and sugar sprinkling perfectly, and how he focused on each single dish. By the way, there are only three dishes on the menu, eel noodles, eel rice noodles, and fried eel noodles; also, a secret menu.

很多人都說鱔魚意麵吃起來像塞了滿口糖 ,但阿江的版本將顛覆你的想像。台南鱔魚意麵通常是有兩種版本。一種是勾芡的,羹湯版本的鱔魚意麵調味上偏酸甜; 另一種是乾炒的,乾炒鱔魚意麵甜味就不會如前者明顯,尤其是阿江的口味不僅將鱔魚意麵該有的酸甜調味都濃縮進去了、還多了一些濃厚的胡椒香。意麵並不會過於軟爛,切塊的炒鱔魚相當有嚼勁,快炒的鑊氣包覆在Q彈有勁的意麵裡,讓人意猶未盡。

Some people say that eel noodles tastes like a mouthful of candy; yet, A Jiang's version will change the way you think about eel noodles. Traditionally, there are two versions for eel noodles, one is with thick, sweet and sour sauce; the other is without the thick sauce. The former is more sweet than the other, usually. Especially for A Jiang's fried eel noodles, it not only comes in traditional sweet and sour flavor, but also the aroma of pepper. The fried noodles is flat, which absorbs all the best seasoning in it, and also chewy. The eels might seem to be less attractive to some people (some even told me it looks like alien's food), they're still delicious, fresh, and worth a try!
